Creamy luscious, ever so satisfying chocolate pudding. Buy it in the store & the ingredients are ridiculous: BHA, red 40, natural & artificial flavors, other yucky unnaturals, mmmm..... I'd rather eat dirt. Anyways, there is something sooo much better our there! I was excited to find this recipe, improve it, & bring more avocado into my life! Yummy & healthy, my husband who hates all things wholesome even enjoyed it, he had no idea it wasn’t conventional!
You will need:
3 large avocado, soft and ripe
1/4 cup cacao powder
3/4 cup coconut milk
1 tsp vanilla extract
2 tsp coconut oil
2 tablespoons maple syrup
2 tablespoons chia seeds
Optional: Shreds of pure dark chocolate or cocoa powder (this is what I used above)
Directions:
Combine avocado, cacao powder, coconut milk, vanilla, coconut oil, maple syrup & chia seeds in a blender or preferably a Vitamix for the best texture. Blend on high for 1 minute or until smooth. Add dark chocolate if desired. Refrigerate for 30 minutes. To speed up the process pre chill the avocadoes & coconut milk. Eat within a day.
