These cookies are what happens when you eat most of the chocolate chips a day or two before you have time to make cookies. You know that they'll be alright without as many, but will your chocolate cravings be truly satiated? Let's be real, probably not! Chocolate frosting to the rescue!
Ingredients For Cookies:
2/3 cup Vegan Butter
1 Egg or Flax Egg (3 Tbl ground flax + 2 Tbl Water mix & soak 3 min.)
1 tsp Vanilla Extract
1/2 cup Coconut Sugar
1/2 cup White Sugar
1 1/2 cups Flour
1/2 tsp Baking Soda
1/2 tsp Salt
All the Chocolate Chips You Haven't Already Eaten
Ingredients for Chocolate Frosting:
3 Tbl Vegan Butter
4 Tbl Coconut Cream
3 Cups Powdered Sugar
4 Tbl Cocoa Powder
1 tsp Vanilla Extract
Guidance:
1. Preheat Oven to 375°
2. Mix Butter, White Sugar, Coconut Sugar, Eggs and Vanilla in a mixer.
3. In a separate bowl sift the Flour and mix with Baking Soda, & Salt.
4. Add Flour Mix to wet ingredients and combine well. Add in Chocolate Chips.
5. Chill dough in fridge 15 min (optional).
6. Place tablespoon sized drops on a greased cookie sheet and press down to flatten. Bake 8 min. Let cool and make the frosting.
7. Sift powdered sugar and cocoa powder then whisk all frosting ingredients in a mixer until well combined. If needed add more coconut milk as desired. Frost cookies when cool. YUM!
